Banana Pancakes - Healthy & Good

Banana Pancakes

These pancakes are healthy and packed with protein.  They are great for breakfast, a handy to-go snack, or easy on the stomach when sick.  (I got through a week of nursing school with the stomach flu on just these pancakes alone.)  

  Ingredients: 

 









2 large, very ripe Bananas.  (Can also do 2 1/2 if you want more banana flavor)
4 large Eggs
1 teaspoon Vanilla Extract
1 teaspoon Baking Soda
4 tablespoons Ground Flax Seed
4 tablespoons Coconut Flour
1 scoop Vanilla Flavored Protein Powder


 Directions:

 1.  In a blender, combine eggs and bananas.  Blend these until smooth.





2.   Add vanilla extract, baking soda, protein powder and flax seed in blender.  Blend until smooth.





3.   Add Coconut flour with blender turned on, one tablespoon at a time.  Blend until smooth.  Batter should thicken as you add coconut flour.  If you desire batter to be thicker, add more coconut flour, 1/2 tablespoon at a time.





4.  Pour onto hot, greased griddle.





5.  Cook until able to flip over with spatula, approximately 6-9 minutes.





We have used, as noticed in these photos a regular blender.  Recently, we have invested in a better blender that allows us to make a double batch of pancakes at once.  We recently purchased the Ninja Professional Blender 1000 (BL610) and it works so much better.  Basically, the blender helps evenly combine all the ingredients.


My grandmother has found that these are able to be put into the freezer and still taste great.  We haven't tried this yet because we eat them so fast that there is no possibility of the going bad before being eaten.
